Blackberry Cobbler

This easy Blackberry Cobbler recipe from The Pioneer Woman takes just 5 ingredients and 10 minutes to prepare.

It’s got a sweet, juicy filling and a crisp golden crust!

Ingredients:

21 oz can of blackberry filling (Feel free to substitute with fresh blackberries if available)

1½ cups of flour

⅓ cup brown sugar

⅓ cup sugar

1½ tsp baking powder

½ tsp salt

½ cup butter, cubed into small pieces (ensure it’s cold for the best texture)

⅓ cup boiling water

1 tbsp coarse sugar (for that delightful crunch on top)

Instructions:

Preheat Oven & Prep Pan: Start by preheating your oven to 350°F (175°C). Lightly grease an 8×8 inch baking dish.

Mix Dry Ingredients:

In a large bowl

combine 1½ cups flour

⅓ cup brown sugar

⅓ cup sugar

1½ tsp baking powder

and ½ tsp salt.

Stir these together until they are well mixed.

Add Butter:

Introduce the cubed butter to the dry mixture.

Using a pastry cutter or your fingers, blend the butter into the mixture until it resembles coarse crumbs. This step is crucial for creating a flaky topping that’s absolutely divine.

Boil & Mix: Pour ⅓ cup of boiling water into the mixture and stir until everything is just combined.

The dough should be moist but not overly wet.

Layer the Filling: Spread the blackberry filling evenly at the bottom of your prepared baking dish.

If you’re using fresh blackberries, you might want to sprinkle a little sugar over them to enhance their natural sweetness.

Top It Off:

Spoon the dough over the blackberry filling, spreading it gently (it’s okay if it’s not perfectly even).

Sprinkle the tablespoon of coarse sugar over the dough for a sparkling finish.

Bake:

Place your cobbler in the preheated oven and bake for 35 minutes, or until the topping is golden brown and the filling is bubbly.
