Italian Wedding Soup, or “minestra maritata” in Italian, is a traditional dish known for its rich flavors and comforting qualities. Despite its name, the soup isn’t actually served at weddings; the term “maritata” refers to the “marriage” of flavors between the meat and vegetables. Typically, it features a savory broth with a mix of meatballs, leafy greens like spinach or escarole, and sometimes pasta. The combination of hearty ingredients and aromatic herbs makes it a popular choice for festive occasions as well as everyday meals.

Ingredients:


1 pound ground beef
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
1 egg, beaten
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon salt
1/2 teaspoon black pepper
8 cups chicken broth
2 cups chopped spinach
1/2 cup small pasta (such as orzo or ditalini)
1/4 cup chopped fresh parsley
Grated Parmesan cheese, for garnish
Directions:


In a large bowl, mix together ground beef, breadcrumbs, grated Parmesan cheese, beaten egg, dried basil, dried oregano, salt, and black pepper until well combined. Roll into small meatballs, about 1 inch in diameter.
In a large pot, bring chicken broth to a boil. Add meatballs and cook for about 5-7 minutes, or until cooked through.
Stir in chopped spinach and pasta. Cook for an additional 8-10 minutes, or until pasta is tender.


Remove from heat and stir in chopped parsley. Serve hot, garnished with grated Parmesan cheese.
