Head of shredded cabbage

Shredded cabbage is a versatile ingredient used in various dishes, from salads to stir-fries. It involves finely cutting cabbage into thin strips, which enhances its texture and flavor, making it suitable for quick cooking or fresh preparations. This preparation method retains the cabbage’s crunchiness and allows it to absorb dressings and seasonings effectively.

4 small cucumbers
2 green pepper(I leave these out because I don’t care for them)
1 large red onion
1 bunch radish
1/2 bunch celery
DRESSING
1 Cup oil
1/2 cup warm water
1 1/2 cup white vinegar
10-12 Tablespoons sugar
1 Tablespoon salt
1 Tablespoon garlic powder
Slice all veggies and place in large bowl.In second bowl mix warm water,sugar,salt and stir until dissolved.

Add the vinegar and oil and mix well. Pour mixture over vegetables and mix thoroughly,pack into jars tightly,pour any left over liquid equally into jars.

Refrigerate until ready to eat. Will last several weeks in the refrigerator.

Variations:

  1. Coleslaw: Combine shredded cabbage with mayonnaise, vinegar, and seasonings for a classic side dish.
  2. Asian Slaw: Mix with sesame oil, soy sauce, and ginger for an Asian-inspired twist.
  3. Tacos: Use shredded cabbage as a crunchy topping for tacos or burritos.
  4. Stir-Fry: Add to stir-fried dishes with vegetables and proteins for added texture.

  1. Uniform Shredding: Use a sharp knife or a mandoline to ensure even, thin strips for consistent cooking and texture.
  2. Freshness: Choose firm, crisp cabbage heads and avoid any with wilted or discolored leaves.
  3. Storage: Store shredded cabbage in an airtight container in the refrigerator to maintain freshness for several days.
  4. Drain Excess Moisture: If using raw in salads, rinse and thoroughly drain the cabbage to prevent excess moisture that can make the dish soggy.
