You will need:
4 lobster tails (5-6 oz each)
1/2 cup unsalted butter, melted
4 cloves garlic, minced
1 tbsp fresh parsley, chopped
1 tbsp fresh thyme, chopped
1 tbsp fresh rosemary, chopped
1 tbsp fresh lemon juice
Salt and pepper to taste
Lemon wedges (for serving)
Directions:
Prepare the lobster tails:
Using kitchen shears, carefully cut down the top of each lobster shell, stopping just before the tail fin.
Gently pull the lobster meat out of the shell, keeping it attached at the base, and rest it on top of the shell.
This will help the meat cook evenly on the grill.
Make the garlic herb butter:
In a small bowl, combine the melted butter with the minced garlic, parsley, thyme, rosemary, lemon juice, salt, and pepper.
Preheat the grill:
Preheat your grill to medium-high heat (around 400°F/200°C).
Brush the lobster tails:
Generously brush the lobster meat with the garlic herb butter, ensuring it’s well coated.
Reserve some of the butter for basting while grilling.
Grill the lobster tails:
Place the lobster tails meat side down on the grill.
Grill for about 5 minutes, then flip them over.
Brush with more garlic herb butter and continue grilling for another 4-5 minutes, or until the lobster meat is opaque and slightly firm to the touch.
Serve:
Remove the lobster tails from the grill and give them a final brush with the garlic herb butter.
Serve immediately with lemon wedges on the side for squeezing over the lobster.
